Garlic Mashed Potatoes

Iteration 1:

INGREDIENTS:

  • 2lbs potatoes (Russet or Yukon Gold)

  • Butter - (1 tbsp per lb of potato)

  • Sour cream - (1 tbsp per lb of potato)

  • Heavy cream - (1 tbsp per lb of potato)

  • Garlic - (1 to 2 cloves per lb of potato)

  • Optional: Nutritional yeast or Parmesan cheese - (2 tbsp per lb of potato)

  • Salting water: 2% salinity (1 tbsp per cup of water)

  • Salt to taste after mashing

METHOD:

  1. Peel and dice potatoes and place them into a bowl with water. Wash the starch off of your diced potatoes.

  2. Add your potatoes and garlic to a pot and fill the pot with water until the water is about a centimeter above the potatoes.

  3. Turn on your stove and let your water come to a boil. Your diced potatoes should be fork tender in about 15-25 minutes

  4. Using a spider or strainer, separate your water and potatoes. Add your potatoes back into the pot and add your butter, salt to taste and other savory ingredients (cream cheese vs. heavy cream vs. sour cream)

  5. Mash to your desired texture, garnish with chives and enjoy
